Launched with the 1990 vintage in 1993, Bin 407 was developed in response to the increasing availability of high-quality Cabernet Sauvignon fruit. Inspired by Bin 707, Bin 407 offers varietal definition and approachability, yet still possessing structure and rich depth of flavour. Textbook cabernet sauvignon, the expressive Bin 407 demonstrates the reward of Penfolds multi-regional blending philosophy. A core of ripe fruit is well supported by sensitive use of French and American oak. After the aromatic impression, one might expect a forbidding palate. Not so. It's remarkably approachable, yet clearly built for a long spell in the dungeon. The cool dark fruits are very concentrated and varietal. The leafy notes on the nose morph into char-grilled savoury flavours of grilled capsicum and cumin spiced eggplant, infused by sandalwood and cherry wood smoke. The tannins are graphite-like, fine but reassuringly persistent, with a faint suggestion of bitter dark chocolate. At the time of tasting the wine is very energetic, dancing the tango at full tempo. Don't expect a slow waltz anytime soon. One for the long haul.

Bin 707 is a perfect Cabernet Sauvignon representation of Penfolds House Style: intensely flavoured fruit, with the completion of fermentation and maturation in new oak. Like Grange, it is a blend of the best Cabernet fruit from the vintage. The 2023 vintage is a rich and commanding wine, its palate saturated with dark fruit flavours with notes of dark chocolate, spice and savoury depths. An expansive, full-bodied wine with proven transformation in the cellar. A first impression reveals that this release is not overtly fruit-dependent, although blackberry and mulberry fruits are instantly detected. Perhaps more of a savoury/earthy disposition, augmented by pan juices/jus and black olive, and laced with exotic spices (African/Moroccan)... turmeric, bay leaf and pimento. Temptingly, (couverture) dark chocolate crackle/Copha flavours combine with the praline and nuttiness of barrel-fermentation. An expansive, woven palate conveys this vinous deliciousness, with a positive tension assisted by seamless Cabernet tannins, that are at once granular, sleek. Structure and flavours are both sophisticated and complex... masterfully conjured and showcased via this noble variety, Cabernet Sauvignon.

The Cabernet Sauvignon grape varietal is widely planted across South Australia's premium wine regions, particularly in the Limestone Coast where grapes with tremendous structure and beautiful aromatics are found. Well-regarded since its launch in 2002, the Koonunga Hill Cabernet Sauvignon showcases the merits of multi-regional blending to Penfolds 'House Style'. A bold, full bodied wine displaying lovely aromatics, excellent structure, and great length.

A blend of Cabernet Sauvignon parcels sourced from vineyards throughout the Barossa. The fruit is fermented for up to 14 days, then aged for 12 months in a mix of French and American oak. Individual parcels of fruit are matured separately to maximise the blend's complexity and finalised through a selection process. The resulting wine is rich and concentrated with aromas of ripe dark berry fruits, blackcurrants and plums with mint and varietal leafy notes. The palate is plush with flavours balanced by fine, textural tannins.

The Barossan showcases the superb fruit sourced from the many fabled sub-regions across the Barossa Valley. A selection of the Barossa's key growers, renowned for their quality and skill, have shared their passion and pristine fruit to create this quintessential Barossa Cabernet Sauvignon. Varying expressions of this classic varietal have been blended together seamlessly, delivering a complex and layered wine with fruit intensity and suppleness. Deep red in colour with a crimson hue, there are aromas of violet, plum and hints of spice and char leading to a rich and luscious palate with plush tannins, vibrant fruit flavour and depth from from American oak.

The grapes were picked at between 13.5 to 14.0 Baume to produce the fruit flavours that are required to make this great wine. The grapes were fermented in a mixture of vessels to produce as much colour and flavour as possible. Portion of the wine underwent oak during fermentation and once dry, the remaining went to oak until the right balance was achieved. Careful tasting and blending, by Quarisa's winemaker, help produce this wine of style and great value for money.
