Made as a traditional 'Australian blend', the Shiraz component provides fleshy fruit flavour while Cabernet Sauvignon provides a frame of fine grained tannins. Building on Penfolds' longstanding connection with France and the expertise of Champagne House Thiénot, this elegant Brut Rosé reflects the collaborative vision of Thiénot Chef de Cave Nicholas Uriel and Penfolds Chief Winemaker Peter Gago. Delicate yet full of charm, it opens with enticing aromas of raspberry, redcurrant and strawberry, lifted by notes of pink grapefruit, mandarin and soft florals. A blend of Cabernet Sauvignon parcels sourced from vineyards throughout the Barossa. The fruit is fermented for up to 14 days, then aged for 12 months in a mix of French and American oak. Individual parcels of fruit are matured separately to maximise the blend's complexity and finalised through a selection process. The resulting wine is rich and concentrated with aromas of ripe dark berry fruits, blackcurrants and plums with mint and varietal leafy notes. Winemaker Richard Mattner - a born-and-bred Barossa local - loves making Pepperjack wines as much as he loves drinking them, especially alongside a great steak. As he says: "Why would I need anything else?" Deep dark red with a vibrant purple rim, the nose bursts with rich aromas of blackberry, blueberry, dark chocolate, mocha, and spice. The palate is plush and layered, delivering concentrated dark fruits, fine tannins, and a soft, lingering finish. Pepperjack Shiraz is a true Barossa classic.

Beneath the surface lie brooding notes of dark chocolate and a hint of roasted meats. The palate is rich and structured, bursting with bright fruit flavours. Silky, plush tannins provide length and finesse, leading to a soft, full-flavoured finish.

Aromas of orange blossom, nectarine and fresh nutmeg combine with delicate layers of subtly integrated oak, fine minerality and ripe citrus fruit flavours. Delicate elegance underpins this finely textured wine which reflects Peregrine's commitment to organic wine growing on the Bendigo sub region that contribute to this Chardonnay.

Enticing aromatics of hazelnut, nutmeg, pear and white peach compliment an elegant and soft palate with fine texture and layers of grapefruit zest, ginger spice and Central Otago stonefruit. Peregrine's organic Pinot Gris is dry in style showing lovely ripe fruit and a subtle texture from a small portion of barrel fermentation. The cooler climate of Central Otago allows Peregrine to maintain a refreshing acidity and great length on the palate.
